Cooking Tips: Filet Mignon

Stove Top/Oven Method

  1. Pre-Heat your oven to 350 degrees.
  2. Steak Prep: Rub Filets all over with a Good Olive Oil.  Season with a Pinch of Kosher or Sea Salt & Freshly Ground Black Pepper.
  3. Let Seasoned Steaks rest while you heat a Cast Iron or Oven Safe Pan on the Stovetop.  Pan will be ready when  you splash just a bit of water off your fingertips into the Pan and the water droplets  “dance” across the surface. (You’ll know what I mean when you try this.)
  4. Place the Oiled & Seasoned Steaks in the Heated Pan.  Sear all surfaces… Face, Back and Sides.  Face and Back should take about 2 minutes each… the sides about 1 to 2 minutes, turning to get all surfaces covered.
  5. Place the Seared Steaks in 350 degree oven for about 5 to 6 minutes until desired doneness.
  6. Check with a Meat Thermometer Probe placed from the side to the center of the steak.  

Medium Rare… remove from oven @ 120 degrees, Let rest, lightly tented with Foil, for 5 minutes.

Internal Temperature will reach 

130  to 140 degrees.  Check!

Internal Appearance… lighter red, very moist w/ warm juices

GRILLED FILET  MIGNON

Charcoal or Gas Grill Prep:

  1. Create more intense heat on one side of your Grill. 
    Charcoal:  Place your Charcoal on one side, Light.  When approximately 2/3rds of the charcoal has turned White and has stopped smoking, You are Ready!
    Gas:  Turn one set of Burners on High.  Place another set on Medium to Medium Low
  2. Steak Prep: Rub Filets all over with a Good Olive Oil.  Season with a Pinch of Kosher or Sea Salt & Freshly Ground Black Pepper.
  3. Once your grill is properly prepared: Sear your Steaks over Direct Heat on both the Face and the Back Sides.  Will likely take 2 minutes per side, but each grill is different.
  4. Move steaks over indirect heat and close the lid.
  5. Continue to grill for another 4 to 5 minutes, turning the steaks once or twice.  Remove Steaks from the Grill when they are to your preferred level of doneness.
  6. Check with a Meat Thermometer Probe placed from the side to the center of the steak.  

Medium Rare… remove from Grill @ 120 degrees, Let rest, lightly tented with Foil, for 5 minutes.

Internal Temperature will reach 

130  to 140 degrees.  Check!
