Food for Thought: Leftover Turkey & Stuffing Stuffed Peppers Recipe
1 Large Egg - beaten
2 C. Leftover Turkey - shredded
2 C. Leftover Stuffing
1/4 - 1/3 C. Leftover Gravy - optional
(if including gravy, use to moisten stuffing/turkey mixture. Don’t overdo)
Kosher Salt - to taste
Freshly Ground Black Pepper - to taste
4 Bell Peppers - suggest red and/or yellow
2 C. shredded Mozzarella - divided
Fresh Parsley - chopped to garnish
Preheat the oven to 350 degrees F.
Cut top off of Bell Peppers, remove ribs and seeds. Set aside.
In a large bowl, combine Beaten Egg, Shredded Turkey, Stuffing and Gravy (optional). Season w/ Salt and Pepper. Mix together.
Spoon mixture into Bell Peppers and top w/ Mozzarella.
Transfer Peppers to baking sheet and bake until Peppers are tender, Turkey/Stuffing mixture is heated through and Mozzarella is melty. Approximately 30 minutes.Garnish w/ chopped Parsley.
