Whipped Sweet Potatoes Recipe
Serves between 12 – 16
INGREDIENTS:
12 medium Sweet Potatoes
1 C. Brown Sugar
1 C. Cream Sherry
1 TBL. All Spice
1 TBL. Vanilla Extract
1/2 # Butter – softened
DIRECTIONS:
Preheat your oven to 400 degrees.
Peel Sweet Potatoes and cut into consistent cubes, anywhere between 1/2 “ and 1”. Just keep them all the same size so they cook evenly.
Place the Sweet Potatoes in a single layer onto a baking sheet. Make sure there’s a little space between them. (You may need more than 1 baking sheet)
Drizzle Sweet Potatoes with Extra Virgin Olive Oil.
Roast your Sweet Potatoes until tender but not yet crisp, roughly 30 to 40 minutes.
Stir after about 15 to 20 minutes.
Meanwhile, mix last 5 ingredients well in a saucepan over low to medium heat.
Mash Sweet Potatoes when roasted. Fold in Warmed Mixed Ingredients and place in a casserole dish. *
Bake until the internal temperature of the casserole is 165 degrees.
* Can make in advance up until this point. Refrigerate until ready to bake.
