Meat Cooking Tips

Our professional butchers and in-house chefs, led by son Jake (“JT”) Homan, offer your favorite meats, Cut-To-Order and even give cooking & grilling tips. These are all USDA-suggested meat cooking temperatures.
Based on 350 degrees but ovens vary. Internal temperatures are more important than cooking time! Hover over each meat type to see our cooking tips.

BEEF

RARE: 115-125 DEGREES
- Internal appearance: dark red; very moist with warm juices
- Approximate cooking and resting time: 12-14 minutes per pound

MEDIUM RARE: 125-135 DEGREES
- Internal appearance: lighter red, very moist with warm juices
- Approximate cooking and resting time: 14-16 minutes per pound

MEDIUM: 140-150 DEGREES
- Internal appearance: pink red; very moist w/ clear pink juices
- Approximate cooking and resting time: 16-18 minutes per pound + 8-10 mins resting time

PORK

ALL - 145 degrees
- Approximate cooking and resting time: 25 minutes per pound
- Plus 5 minutes resting time

POULTRY

ALL - 165 degrees
- Approximate cooking time and resting: 20 minutes per pound but depends on cut.
- No resting time

LAMB

MEDIUM RARE: 130-140 DEGREES
- Internal appearance: lighter red; very moist w/ warm juices
- Approx cooking and resting time: 25-30 mins per pound + 8-10 minutes resting time

SEAFOOD

ALL - 145 degrees
