INGREDIENTS:
4 Bell Peppers – suggest red and/or yellow
1 Large Egg – beaten
2 C. Leftover Turkey – shredded
2 C. Leftover Stuffing
2 C. Leftover Green Bean Casserole OR other T’giving Veggie Casserole
1/4 – 1/3 C. Leftover Gravy – optional (if including gravy, use to moisten stuffing/turkey mixture. Don’t overdo)
Kosher Salt – to taste
Freshly Ground Black Pepper – to taste
2 C. shredded Mozzarella – divided
Fresh Parsley – chopped to garnish
DIRECTIONS:
Preheat the oven to 350 degrees F.
Cut top off of Bell Peppers, remove ribs and seeds. Set aside.
In a large bowl, combine Beaten Egg, Shredded Turkey, Stuffing, Veggie Casserole of choice and Gravy (optional).
Season w/ Salt and Pepper. Mix together. Spoon mixture into Bell Peppers and top w/ Mozzarella. Transfer Peppers to baking sheet and bake until Peppers are tender, Turkey/Stuffing mixture is heated through and Mozzarella is melty. Approximately 30 minutes.
Garnish w/ chopped Parsley.
