Thai Curry

(serves 8)

Thai Curry over Noodles
Can be combined with chicken or shrimp and piled on noodles.
Ingredients:
1 – 2 T. Curry Paste
1 Medium Yellow Onion – diced
3 C. Chix. Stock
2 Cans Coconut Milk (unsweetened — “not for Piña Coladas”)
Chuka Soba Noodles (or Ramen w/out seasoning)
Fresh Cilantro – chopped
*Chicken or Shrimp – optional
Directions:
Saute’ diced onion until translucent.  Add 1 – 2 T. Curry Paste (to taste).  This mixture will be kind of dry but that’s the way it’s supposed to be.  Saute onion and Curry Paste until incorporated well. 
*can add diced chix. at this point if you want to
Whisk in 3 Cups of Chicken Stock (don’t skim fat)
Whisk in 2 Cans of Coconut Milk.  DO NOT boil after this point — keep it to a simmer!  
*can add shrimp at this point if you want to
Place cooked Chuka Soba Noodles in each bowl
Sprinkle with Fresh Cilantro
Spoon in Curry Mixture
Voila!
~when making ahead… you may have to blend the soup after re-warming and prior to serving.  Not allowing soup to come to a boil should help to alleviate this issue.~
